In Old San Juan, where blue cobblestones meet centuries-old balconies and the hum of nightlife drifts through narrow streets, there’s a place where music doesn’t just play—it unfolds as if alive. Tucked into this historic district is Carli’s Fine Bistro & Piano Bar, a venue that feels less like a restaurant and more like stepping into someone’s lifelong passion.
We at JMO call this yet another “accidental finding”. We had been searching for a place to land for dinner and after a more than a few tries, delightfully discovered Carli’s.
From the outside, it’s inviting but unassuming. Step inside, though, and the atmosphere shifts immediately. Candlelight flickers across polished wood, conversations soften, and at the center of it all sits a piano—waiting, or more accurately, already alive. Because here, the music isn’t background noise. It’s the heartbeat of the entire experience.

That heartbeat belongs to Carli Muñoz.
Before opening his namesake café, Carli built a career that stretches far beyond Puerto Rico. He is best known for his work with The Beach Boys, where he served as a keyboardist and musical director for years. Performing alongside one of the most iconic bands in American music history, Carli helped shape live arrangements and contributed to the group’s evolving sound. But his musical journey didn’t stop there—his résumé includes collaborations across jazz, Latin, and contemporary music, along with a reputation as a composer, arranger, and producer.

And yet, despite that global experience, he chose to root something deeply personal in Old San Juan.
At Carli’s Fine Bistro, however, he isn’t just the owner—he’s the performer. Check out this snippet of Carli’s piano playing. Beware though, while it may be a teaser, it’ll entice you to go back for more.
Night after night, Carli himself takes his place at the piano, not as a scheduled act but as a constant presence. There’s something rare about that. In an era where celebrity often creates distance, here it creates intimacy. You’re not just hearing about his talent—you’re experiencing it in real time, a few feet away.
What makes it even more remarkable is how effortlessly it all seems to happen.

Carli doesn’t simply play songs—he reimagines them. A familiar melody might begin in a soft jazz arrangement, then subtly weave into blues phrasing before drifting into something that feels almost like Broadway. He blends genres with such ease that the transitions often go unnoticed. To most guests, the music simply feels “great.” To other musicians, it is beyond impressive. But beneath that simplicity lies an extraordinary level of complexity—improvisation layered with deep musical knowledge, executed so fluidly it feels natural.
It’s the kind of artistry that doesn’t demand attention but quietly earns it.
One moment you might recognize a classic standard, and the next, it’s transformed—slowed down, reshaped, or infused with unexpected emotion. Carli has the rare ability to create something entirely new within something familiar, pulling from jazz, blues, classical, and theatrical traditions all at once.
And he does it casually, almost conversationally, as if the piano were just another way of speaking. It’s as if, no, it is in a way that connects listener to the performer so completely that one could easily feel guilty for having a conversation with your table mate rather than listening intently to his creations.
The result is an atmosphere that feels both sophisticated and deeply relaxed. There’s no pressure to analyze what you’re hearing—only to enjoy it.
Of course, the music may be the soul of the experience, but the food ensures you stay.
The menu at Carli’s Fine Bistro matches the artistry coming from the piano. It’s refined without being pretentious, offering dishes that feel thoughtfully prepared and genuinely satisfying.
The soup specials, in particular, have earned a quiet reputation among regulars—rich, flavorful, and often surprising in their depth. Examples would be a Manchego Potato Soup, having such a complexity of flavor it’s almost unbelievable. Or the Onion Beef Soup – an amazing blend of ingredients that reminds you of a great French onion soup, but so much better.

Then there’s the risotto mignon.

It’s the kind of dish that makes you pause after the first bite. Perfectly cooked, creamy without being heavy, and layered with flavor, it reflects the same attention to detail found in the music. Much like Carli’s improvisations, it balances richness with nuance—comforting, but never simple.
Dining here becomes a full sensory experience. The clink of glasses, the low murmur of conversation, the aroma of well-prepared food, and above it all, the piano—always evolving, always present.

What’s striking is how naturally it all comes together. Nothing feels forced. The transitions—from meal to music, from conversation to quiet listening—happen organically. You might arrive thinking you’re just going out for dinner, but somewhere between the first course and the second song, you realize you’ve stepped into something more meaningful.
It’s also a place that rewards attention without requiring it. You can sit back and enjoy the ambiance, letting the music wash over you. Or you can lean in, noticing the subtle shifts in tempo, the unexpected chord progressions, the way one genre melts into another. Either way, the experience meets you where you are.
And that may be the most defining feature of Carli’s Fine Bistro.
But none this atmosphere is by accident. Carli himself, along with the staff at Carli’s are, quite simply, wonderful. Attentive without hovering, friendly without pretense, they seem genuinely happy to be there—and that feeling is contagious. It’s the kind of service that doesn’t just meet expectations but quietly elevates the entire evening.
It doesn’t try to impress in obvious ways. There are no grand gestures, no over-the-top theatrics. Instead, it offers something far rarer: authenticity. A space where a world-class musician chooses to share his craft not on a distant stage, but in an intimate room filled with good food and attentive listeners.
In a city rich with history, color, and energy, places like this stand out not because they compete, but because they connect. Carli’s Fine Bistro & Piano Bar isn’t just another stop in Old San Juan—it’s an experience that lingers.
Long after the last note fades, you’ll remember how it felt.
We at JMO have been to many restaurants, so we understand the complexity of a good restaurant, a great restaurant, and a restaurant you can (and want to) return to, again and again. To that point, we shared Carli’s in the lobby of the hotel we were staying at with another couple. While at our second night at Carli’s, they came up to us after dining and thanked us profusely for sharing the location…
That normally says it all…
Except on top of that—during our two experiences, we had the opportunity to speak to a number of staff members and they all said the same thing, Carli is quite simply an all around nice guy. And having had the pleasure of talking directly with Carli ourselves he cares indeed about those who frequent his establishment, wanting everyone to enjoy that experience as much as he does serving them with music and food.
